Museumand recipe contribution: Ginger Beer
Ingredients
To make 3 litres of ginger beer you will need
- 125 grams fresh grated ginger
- 1 lemon
- 6 whole cloves
- 2.5cms cinnamon stick
- Brown sugar/honey to taste
Method
- Scrub ginger before grating
- Use the smallest side of a box grater to grate until left with only the husk.
- The ginger husk can be frozen for making lemon and ginger tea
- Put the grated ginger into a container that will hold at least 1 pint of liquid
- Add cloves and cinnamon
- Wash and squeeze the lemon
- Add the lemon juice
- Pour a litre of cold water on to all the ingredients
- Leave to set overnight.
- Strain contents of the container
- Add 2 litres of cold water to the strained liquid
- Sweeten to taste with brown sugar/honey
